Sweet Saffron Rice

Saffron is the most expensive spice in the world, by weight. Be it sweet or savory, saffron always adds that special touch to any dish. In the east, saffron is widely used in cooking, as a flavoring or a coloring agent, and sometimes, both. This Sweet Saffron Rice is one of my favorite dishes to make with saffron. I serve it to gods on a auspicious occasions and sometimes, even with grilled vegetables or meat.

Brown Lentils (Masoor Dal)

 This is a healthy recipe for this time of the year. I love lentils and they are great for your health. I hope you enjoy this recipe. Chutney Pinwheels

This appetizer is quite popular within the Indian community. Some of us may enjoy making our own puff pastry sheet but I will leave that up to you. You can also make the pinwheels ahead of time and freeze it. Right before serving, you can thaw the frozen pinwheels for 30 minutes and bake.  Serves 2 Ingredients 3 Tablespoons Rupen's Eggplant Chutney (Vangi) 1 Pepperidge Farm puff pastry sheet 1 1/2 cups fresh arugulaInstructions Thaw frozen puff pastry sheet in the refrigerator for a couple of hours. Spinach Soup

  Serves:4   Ingredients 2 Tablespoons olive oil 1 medium white onion, diced 1 Tablespoon sea salt 2 cups peeled and diced Yukon Gold potatoes 1 carrot, peeled and diced 1 lb frozen chopped spinach, thawed 1 teaspoon ground black pepper 1 Tablespoon curry powder 3 cups vegetable stock 3 Tablespoons unsalted butter 4 Tablespoons creme fraiche OR sour cream, for garnish   Instructions In a 4 qt Dutch oven over medium heat, add oil, onions and salt. Saute for 5 minutes. Add potatoes, carrots, spinach, pepper, curry powder. Mix. Cook for 5 minutes, stirring once every minute. Add vegetable stock and bring the mixture to a boil.
