‘Masala’ is a spice blend and ‘Chai’ is tea in Hindi. Usually, Masala Chai is only hot in India, and weather does not matter. This recipe is an adaptation of India’s classic drink. Garlic Infused Red Lentils

Serves: 4 Ingredients  1 cup red lentils, rinsed once in cold running water and set aside Seasoning: 2 Tablespoons ghee/clarified butter 1 teaspoon cumin seeds 1 1/2 peeled chopped garlic 1 jalapeno, seeds and vein removed, and diced 1/2 teaspoon ground turmeric 1 cup Roma tomatoes, chopped 1 teaspoon sea salt 1/4 cup chopped cilantro, for garnish Instructions  Once the lentils are rinsed, soak in 2 cups water for one hour. Serves: 4 Ingredients Chutney: 1 bunch cilantro, rinsed, and the last 2 inches of the cilantro stalk removed, then roughly chopped 1/4 cup fresh mint leaves 1 jalapeno 1 teaspoon salt 1 teaspoon sugar 8 slices white bread 4 Tablespoons unsalted butter, at room temperature 1 English cucumber, thinly sliced 2 beefsteak tomatoes, thinly sliced 1 medium-size red onion, thinly sliced roundels 1 large Idaho OR Yukon Gold potato 1 large beet 1 Tablespoon sea salt 1 Tablespoon ground black pepper Instructions Bring 3 cups water to a boil.
